Chinese Winter Melon Soup Recipe: Restaurant Style

The cold weather is here a great time to have comfy hot meals. It is declared "Soup Season" at home. The ones that are nutritious, simple and easy to make with a few ingredients. Are you on for a great soup recipe?

How many times did you have soup while waiting for your meal at a Chinese restaurant? Wasn't it tasty? Most of the times you are served Chinese Winter Melon Soup. Today I am sharing the recipe so you can make it at home.


  • Pork bones {cut into chunks}
  • 4 cups water
  • 1/2 winter melon {already cut at Asian markets} cut into large chunks 
  • 10 dried red dates {Asian dates} 
  • 1 inch ginger, sliced into small pieces 
  • 1/2 cup boiled peanuts (although it is optional you will love them!) 
  • Salt to taste
  • 1 Chicken bouillon cube {mash it with a fork into a paste and add it to the broth}
  •  Pinch of pepper {I use black pepper}
  • Chopped Coriander to garnish 

Chinese Winter Melon Soup Recipe: Restaurant Style

  1. Place pork bones in a pot and fill it up with enough water to cover them
  2. Bring to a boil for about three minutes
  3. Remove pork bones from pan. Dump water and scum
  4. Rinse out pork bones
  5. Return pork bones to pot and add 4 cups of water
  6. Add mashed chicken bouillon cube
  7. Add pinch of black pepper
  8. Bring to a boil and lower heat to a simmer
  9. Add ginger chunks and red dates. Simmer for about an hour
  10. Season with a little bit of salt
  11. Add winter melon chunks. Simmer until winter melon is tender
